Valdimar Tr. Hafstein, Professor of Folklore, Ethnology, and Museum Studies at the University of Iceland.
Focusing on the creamy example of skyr, a traditional, fermented dairy from Iceland that has recently carved out a place in dairy aisles across the world, the lecture will introduce a project that gathers folklorists, microbiologists, and nutrition scientists to study the symbiotic practices of humans and microbes in fermented foodways, gut microbiomes, and compost.
